Ok Katie....here is my entry...it is super easy and hopefully delicious....It is for your main dish, and could be served with a nice salad and spanish rice from an easy box of quick rice ...you know me..Sam and Jason kidded me so much about all the times I served poor Sam chicken and rice something! Anyway, this has a southwest flavor and I know you like Mexican food. BACON WRAPPED CHICKEN: Boneless, skinless chicken tenders. Sliced Jalapeno chiles. Sliced bacon. Lay the vertically sliced Jalapeno on a chicken tender. Wrap one strip of bacon around the entire length of the chicken and Jalapeno. Fry until crisp. Serve hot. Me Gusta mucho! Laurie Boone

yo! here's my entry....

in a skillet put...
sliced red/green/yellow (doesn't matter) bell peppers, onion, mushrooms (if you want), and any other kind of vegetable that's handy (maybe try zuchinni, too). should make about 1/2 cup once fully cooked. add chicken cut up into little pieces. pour in a generous amount of balsamic vinegar and cook together.
in another skillet brown a tortilla.
in a small bowl mix 2T mayo with 2T balsamic vinegar to make aeoli sauce.
spoon aeoli into tortilla and spread. add chicken and vegetables.
top with mozarella cheese. :)
