Ok Katie....here is my entry...it is super easy and hopefully delicious....It is for your main dish, and could be served with a nice salad and spanish rice from an easy box of quick rice ...you know me..Sam and Jason kidded me so much about all the times I served poor Sam chicken and rice something! Anyway, this has a southwest flavor and I know you like Mexican food. BACON WRAPPED CHICKEN: Boneless, skinless chicken tenders. Sliced Jalapeno chiles. Sliced bacon. Lay the vertically sliced Jalapeno on a chicken tender. Wrap one strip of bacon around the entire length of the chicken and Jalapeno. Fry until crisp. Serve hot. Me Gusta mucho! Laurie Boone
in a skillet put... sliced red/green/yellow (doesn't matter) bell peppers, onion, mushrooms (if you want), and any other kind of vegetable that's handy (maybe try zuchinni, too). should make about 1/2 cup once fully cooked. add chicken cut up into little pieces. pour in a generous amount of balsamic vinegar and cook together. in another skillet brown a tortilla. in a small bowl mix 2T mayo with 2T balsamic vinegar to make aeoli sauce. spoon aeoli into tortilla and spread. add chicken and vegetables. top with mozarella cheese. :)
