the CHALLENGE

(taken and tweeked from "the next iron chef")

Supply one or two recipes for Chef Katie to prepare, eat, and judge.

the RULES:
1) No dessert and no breakfast.
2) Can't need an oven or more than two cook tops.
3) Must have fairly inexpensive ingredients (if I think it's too costly, I will remove the entry).

some HINTS:
favorite flavor - onion
favorite food genres - southwest & greek (not homemade mexican)
variety and creativity are key!

i will announce the winner and award them their PRIZE thanksgiving weekend!

Well, you could make a terryaki stir fry. Here's the easy version:
1 Chicken Breast or 5-8oz of beef (you could get pre-cut stir fry strips)
1/4 cup olive oil
1 pkg frozen stir fry veggies (I like the one with Asparagus in it)
1 tsp of garlic powder (you can add more if you really like garlic)
1/4 cup terryaki Sauce

Stir Fry:
Cut thawed chicken breasts or steak into 1/2 in strips. Pour enough olive oil into a pan so as to cover the bottom. Put heat on Med-High to High. Place cut meat in pan and sprinkle half of the garlic powder over it. Now, cook the meat in the oil, stirring frequently. While that is cooking thaw your veggies in the microwave. When the meat is pretty much done, add the veggies, sprinkle the rest of the garlic powder on and mix well. After 1-2mins add terryaki sauce. Simmer for 2-5 mins making sure your veggies aren't too soft and serve over sticky white rice. :)

Terryaki sauce:
1cup sugar
1cup soy sauce
1tsp garlic powder
1-2 Tbs grated fresh ginger root(you could use 1-2tsp of ginger powder)

Place sugar and soy sauce in pot with stove on Med-High, stir well and frequently until sugar is melted. Then add garlic powder and ginger. I always add them to taste, but the measurements above should get you close. :)

How about Orange Peach Chicken?

3 chicken breasts/ cut into pieces
flour, salt, and pepper
2T butter
2T cooking oil
1 1/2 cup orange juice
2T vinegar
2T brown sugar
1t basil
1/2t nutmeg
1 can drained peaches

shake chicken in bag with flour, salt, pepper. Brown chicken in butter and oil. Combine orange juice, vinegar, sugar, basil, and nutmeg. Pour mixture over chicken.
cover and cook over low medium heat until tender approximately an hour. Baste and stir often. Add peaches uncovered for last ten minutes.
